Baked Oatmeal

I’ve hesitated to make this for breakfast because a lot of people say they just don’t like oatmeal.  But we have a guest who can’t eat wheat flour, so we decided to try this one.  It’s a hit!  Not a single bite came back on any of the plates.

Baked Oatmeal

Ingredients
  

  • 1/3 cup vegetable oil
  • 1/2 cup brown sugar packed
  • 1 egg
  • 2 cups oatmeal cooked
  • 1/2 tablespoon baking powder
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • dash cinnamon
  • 1/4 cup raisins, currants, craisins or dried blueberries

Instructions
 

  • Preheat oven to 350 F.
  • Mix all together in a mixing bowl and beat until well mixed. Pour into a greased 8×8 pan. Bake at 350 degrees. Cut into squares and serve. Some people like a little butter on theirs.

Notes

Note:  You can easily double this recipe (use 3 eggs) and bake in a 9×13 pan for 40-45 minutes.  I served this with maple syrup on the side, but no one used it.
