Ingredients
  

  • 8 slices bacon diced
  • 1/2 onion diced
  • 1 clove garlic minced
  • 8 ounces mushrooms diced
  • 2 cans (15 oz. each) tomatoes diced, or use whole canned and chop them
  • 1 Tablespoon chipotle chile in adobo sauce, pureed use less for less heat
  • 1 teaspoon dried tarragon use more if using fresh tarragon and chop fine
  • salt
  • pepper
  • Parmesan or Romano cheese grated (optional)
