Gluten-free Green Chile Quiche

Ingredients
  

  • 8 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon white pepper
  • 10 ounces half-and-half
  • 16 ounces Monterey Jack cheese or a cheddar/Jack blend
  • 16 ounces cottage cheese
  • 3 ounces cream cheese softened
  • 2 4 oz. cans green chile drained (can use frozen--thaw and drain)

Instructions
 

  • Preheat oven to 375F. Whisk the eggs in a bowl until blended. Add baking powder, salt, white pepper and milk; whisk until combined. Add cream cheese and whisk it in. Stir in the Monterey Jack cheese, cottage cheese and green chile.
  • Pour the mixture into a greased 9x13-inch baking pan.
  • Bake for 35-45 minutes or until set (internal temperature should be 170F).
  • Cool for 10 minutes and cut into squares.
  • Note: this recipe will make 12 individual quiches. Use a 4-ounce ladle to fill each quiche dish.
