Ingredients
- 8slices bacondiced
- 1/2 oniondiced
- 1clove garlicminced
- 8ounces mushroomsdiced
- 2cans (15 oz. each) tomatoesdiced, or use whole canned and chop them
- 1Tablespoon chipotle chile in adobo sauce, pureeduse less for less heat
- 1teaspoon dried tarragonuse more if using fresh tarragon and chop fine
- salt
- pepper
- Parmesan or Romano cheesegrated (optional)
