Baked Oatmeal

I’ve hesitated to make this for breakfast because a lot of people say they just don’t like oatmeal.  But we have a guest who can’t eat wheat flour, so we decided to try this one.  It’s a hit!  Not a single bite came back on any of the plates.

Baked Oatmeal

1/3 c. vegetable oil
1/2 c. brown sugar
1egg
2 c. cooked oatmeal
1/2 T. baking powder
1/2 cup milk
1 tsp. vanilla
dash of cinnamon
1/4 c. raisins, currants, Craisins or blueberries

Mix all together in a mixing bowl and beat until well mixed.  Pour into a greased 8×8 pan.  Bake at 350 degrees.  Cut into squares and serve.  Some people like a little butter on theirs.

Note:  You can easily double this recipe (use 3 eggs) and bake in a 9×13 pan for 40-45 minutes.  I served this with maple syrup on the side, but no one used it.
